Healthy Recipe: Avocado Toast with Fried Egg






Here we are at the last Monday of January, which is so crazy, but also means that this is the last 'Healthy Recipe' post. I hope that you guys have enjoyed this addition to Faith & Fancy over the last few weeks, and that is has inspired you to try out a few healthy recipes. I've had so much fun sharing them with you, and although this will no longer be a regularly scheduled blog post, I'm sure there will be plenty more food related posts in the future! I hope you enjoy this last one - it is truly one of my favorites!

As I'm sure many of you know avocado toast has really made a name for itself in recent years and can be found on almost any brunch menu - and for good reason too! It's a delicious and super simple meal to throw together for breakfast, lunch, or even as a snack. I could seriously eat it everyday! Of course the name implies that it is just avocado on toast, but there are so many different variations of how it can be made. I love mine with a fried egg and red pepper flakes, but it can really be whatever you want it to be! It's hard to tell in the pictures above, but I actually threw some pesto on my toast before adding the egg and avocado for a little extra flavor - it was delicious! You can dice up tomatoes to add to the avocado, slice the avocado instead of smashing it, or swap out different bread choices. I chose a slice of Ciabatta bread, but a hearty whole grain bread is equally as delicious. Below I'm sharing the basics for a good avocado toast, but the options are endless. It's fun to play around with different variations to see what you like best! Enjoy!

AVOCADO TOAST WITH A FRIED EGG

Ingredients: 
1 avocado
1 egg
1 slice of toast of your liking
Olive oil
Crushed red pepper flakes 
Salt & pepper

Directions:
1. Cut up avocado, place in small bowl, drizzle with olive oil, salt & pepper, and smash
2. Fry one egg and place on top of toast when done
3. Top fried egg with smashed avocado 
4. Finish with a sprinkle of crushed red pepper flakes
