Healthy Recipe: Kale and Quinoa Salad with Lemon Dressing






This next recipe is something that is perfect as a side salad or can be eaten as a light lunch or dinner! My mom and I had it a few weeks back at a café we went to for lunch, and we loved it so much we figured we would try to replicate it at home. The recipe itself is super easy to throw together but is still full of flavor and quite a few different ingredients. I know it sounds super healthy (it is!) but it is also just as delicious! You will have to give it a try for yourself to find out!

Since we were replicating this recipe, I don't have exact measurements or amounts of each ingredient, but it is essentially just combining all of them in a bowl. I used more kale and quinoa as the base of my salad and then used the other ingredients more as toppings, but you can adjust yours however you want really! For the lemon dressing, I followed a recipe out of my Love & Lemons cookbook, which was the perfect complement to the flavors already in the salad. Below I have shared all the ingredients and directions for both the kale salad and the lemon dressing! Enjoy!

KALE AND QUINOA SALAD

Ingredients
Kale 
Quinoa 
Artichoke hearts
Mushrooms 
Sun-dried tomatoes

Directions
1. Cook quinoa according to package instructions
2. Remove stems of kale and cut into bite-sized pieces
3. Combine all ingredients 
4. Dress with lemon dressing (see below) and toss 

LEMON DRESSING

Ingredients:
2 tbsp. extra virgin olive oil  
2 tbsp. fresh lemon juice
2 tbsp. fresh orange juice 
1 tsp. Dijon mustard
1 garlic clove, minced
Salt and pepper to taste

Directions
Combine all ingredients and stir together!
